职位描述：
概述：
熟知餐饮（重点西餐）相关的法律法规和制度，且具有计划、监督、人事、服务、工资、食品成本控制、保养和卫生的相关知识。其它要求：懂得厨房的布局、规划、前期工程设计，具有较强的管理能力、社会活动能力、领导能力、协调能力、业务开拓能力、计算机应用能力。

主要职责：
1. 制定本部各项规章制度，健全完善内部管理。
2. 制定年度、月度的营业计划，领导全体员工完成各项工作任务和经营指标。
3. 分析年度、月度经营状况，严抓成本，推广食品销售，编制菜单。
4. 控制食品标准，加强食品管理，严把原料验收与出品质量关，降低成本，增加赢利。
5. 抓好食品卫生和安全生产工作，贯彻执行餐饮各项卫生制度，加强消防培训，提高员工卫生、消防安全意识，确保各部位的安全。
6. 了解市场原料价格，发掘新产品，不断开发新菜。
7. 加强管理和业务技能培训，控制日常的食品出品质量，抓好员工的纪律及卫生工作；
8. 对厨房设备设施的安全性，正确操作方法全面了解，发生事故能正确及时无误的处理、解决。
任职资格：
1、有五星级酒店总厨经验优先考虑。
