1. Finalize Food Cover Report and photocopying of various documentation for F&B Control and Finance Department.
2. Keying Revenue Journal and distributing to the relevant managers.
3. Control of dockets used in all Outlets, maintaining correct sequence used at all times, Account for all dockets and making sure canceled dockets recorded accordingly.
4. Control all Food and Beverage sales by:
a. Correctly recording of guest checks on a timely basis.
b. Perform spot checks on outlet checks used.
c. Having all voided checks, corrections and unsettled checks
approved by the Restaurant Supervisor or Manager.
d. Monitoring the buffet controls, especially over cash settled
checks to prevent re use ensuring all revenue is recorded.
e. Ensure banquet controls are being adhered to.
f. Reconciling total outlet sales to total charges.
5. Ensure all rebates and miscellaneous charges are supported by documentation detailing the charges. All Rebate Credits must be process in accordance with Policy & Procedure C10. The Rebate Credits, Miscellaneous Charges and Paid Outs must be summaries and set to the Director of Finance and General Manager for review daily.
6. Ensure that programs involving coupons, certificates and vouchers are adequately controlled and safeguards are in place.
7. Audit daily collection of the General Cashiers Summary against the bank in slip.
8. Audit and reconcile advance payments and ensure payment has been applied.
