Responsibilities:
1. Supporting the development and the position of Big Bamboo/Pistolera brand.
2. Ensures compliance with all policies, standards and procedures.
3. Actively involved in training kitchen staffs on the fundamentals of good cooking and excellent plate presentations.
4. Recognizes superior quality products, presentations and flavour.
5. Maintain purchasing, receiving and food storage standards.
6. Ensures compliance with food handling and sanitation standards.
7. Ensures compliance with all local Health Department regulations.
8. Makes all dishes some in standard recipes.
9. Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily.
10. Maintains procedures for food & beverage portion and waste controls.
11. Follows proper handling and right temperature of all food products.
12. Knows and implements Corporate Safety & Hygiene Standards.
13. Conducts briefings with the Restaurant staff for education on menu items including ingredients, preparation methods and unique tastes.
14. Understands and communicates to staff the operating and maintenance procedures of all departmental equipment.
15. Ensures uniforms are properly inventoried and maintained.
16. Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
17. Effectively investigates, reports and follows-up staff accidents.
qualifications:
1. At least 4-6 years of Western restaurant experience in manage & supervising staff of a kitchen.
2. Assist to implement systems to run kitchen more efficiently, Certified hygiene certified to A2 level.
3. Experience in coping with daily restaurant situations.
4. Quality Control of prepared foods. An energetic, enthusiastic nature;
5 Honesty, integrity and the desire to learn and better him/herself;
6.Strong leadership skills with the ability to gain the respect and following of their staff 。
主要职责:
1、支持公司北美西餐厅/ 墨西哥西餐厅品牌定位的发展。
2、负责处理厨房所有的流程运作及行政事务;执行并积极配合上级下达的各项工作任务和工作指示,做好部门员工的管理,负责厨房的考勤工作。
3、负责领导厨房各个岗位作业,确保菜品加工、出品,汤料调制,餐具清洗、保管和回收等工作有序进行。指导厨房各班做好餐前、餐中、餐后的准备工作,确保菜品及时供应。
4、遵照食品卫生法的有关规定,加强食品的保鲜和卫生工作,监督检查搞好厨房的环境卫生,员工的个人卫生,确保所有食品符合健康要求。
5、管理维护好厨房设备、厨具、餐具,经常检查厨房设施设备的运转情况和用具使用情况,保持清洁卫生,不损坏、不丢失。
6、控制厨房部们的预算,拟订菜品的成本、费用和利润计划,及时和行政副厨进行沟通。
7、熟悉各种原材料的价格、淡旺季特点,掌握货源供应情况,保证货源供应及时、质量良好。落实货源的验收和储存,并对其作业管理流程作密切监控。
8、监督厨房用料情况,合理使用原材料,减少浪费和损耗,准确掌握原料的库存量,协助公司做好每月的盘点工作,做好厨房成本控制。
9、正确的指导和激励下属员工独立完成指定的工作,负责餐厅厨师队伍培训规划和指导,严把技术、质量关,保证菜品质量,随时解决各种疑难技术问题。
10、经常与上级等相关部门在工作上进行协调,听取顾客的意见,不断的改进。
11、负责厨房的安全防火工作,培训厨房员工下班前做好检查水、电、气各系统,消除隐患和不安全的因素。
任职资格:
1、至少有4-6年在餐饮管理或酒店厨房工作经验。
2、有餐厅的管理工作经验。
3.具有强烈的责任心,勇于开拓和创新,作风干练。
4.拥有较高的烹饪技术,了解和熟悉食品材料的产地、规格、质量、进价。
5.对成本控制管理、厨房食品库存管理,厨房的设备知识拥有一定的基础。
