职位描述
Job Description:
? Full responsible and support for pre-opening the restaurants, coffee bar and other outlets in communities.
? Opening Assistance
? Conduct competition analysis
? Design and comments on the functional positioning of the restaurant/outlets according to the overall architectural layout.
? Design and finalize the organization of dining.
? Prepare the purchasing list for dining
? Design and development of Job Descriptions
? Design of Dining Policy & Procedure, Service Standard, etc.
? Develops and writes standard recipes.
? Sets Food Production and Stewarding goals and develops strategies, procedures and policies
? Conduct the Rank & File recruitment/interview
? Develops training material in accordance with local guidelines and implements training plans.
? Conduct the training for employees including Dining P&P, Service Standard, grooming,work safety, etc.
? Oversee the management of restaurants, coffee bar, etc.
? Supervises the functioning of all Dining employees, facilities, sales and costs, to ensure maximum profit is achieved
? Controls and analyses, on an on-going basis, in order to optimize the following:
o Quality levels of product and service
o Residents/ Visitors/ Employees satisfaction
o Operating costs
o Sanitation and cleanliness (hygiene)
? Control with the Purchasing & Finance Department to determine the minimum and maximum Food and Beverage par stocks. Approves all dining items purchases in accordance with Starcastle quality and quantity standards.
? Plans and organizes with the Site Executive Director of successful dining activities in the community.
? Oversee the management of kitchen operation.
? Ensure all functions of the Food Production and Stewarding operations to achieve the optimum quality level of food production and sanitation
? Develops new dishes and products with dietitian to meet the residents’ needs.
? Controls and analyzes, on an on-going basis, the level of the following:
o Costs
o Issuing of food
o Quality and presentation of food products
o Condition and cleanliness of facilities and equipment
o Residents/visitors/employees satisfaction
? Keeps an up-dated Policies and Procedures file and up-dated files on the following Food Production matters:
o Recipes
o Finance
o Standards
o Personnel and Training
o Outlets
o Promotions
o Projects
o Material and Equipment
o Miscellaneous
? Others:
? Works with each Site Executive Director and Human Resources on manpower planning and management needs
? Works with each Site Executive Director and Finance Department in the preparation and management of the Department’s budget.
Requirements:
? 5 years and above experience on dining operation management. Brand hotel pre-opening working experience is preferred.
? Ability to interact with Residents, Visitors and employees and third parties that reflects highly on the community and the Company.
? Strong problem solving, motivating, organizational and training abilities.
