职位描述

职位概述:保证西餐厅厨房运作正常,保证出品质量,提高餐厅营收,降低成本,增加利润,监督卫生,为酒店创效益,提高知名度。

层级管理关系:
直接上级:餐饮总监
直接下级:西厨主管、西点主管、冷房主管
工作职责和工作内容:
1、在餐饮总监的督导下,全面负责厨房的组织、指挥和烹饪工作;
2、了解各岗人员工作特点和技术水平,根据各人专长,合理安排技术岗位;
3、组织厨房完成月、季、年度工作计划;
4、组织指挥调度、大型酒会、宴会的菜品制作;
5、熟悉各种原料种类、产地特点、价格及淡旺季,熟悉货源供应情况,与采购部保持良好的联系,保证货源供应及时;
6、做好货源的采购工作,落实货源购进的验收和储存;
7、定期了解市场行情,竞争形式以及宾客意见,不断研制、创新菜式,在保留餐厅传统菜式,保持特色不变的基础上,每周推出1至2个新菜式;
8、在做到稳定和不断提高出品质量的基础上,改进和提高技术水平、烹调方法。与营业部、楼面保持良好关系;
9、与相关部门一起调查了解市场货源进出,其他酒店的出品价格,做好菜谱的合理定价,以获得较好的利润;
10、合理使用各种原料、材料,减少浪费,以控制食品成本;
11、抓好厨房卫生工作,严格贯彻执行《食品卫生法》;
12、抓好厨师的技术和管理培训工作,保持酒店的餐饮特色,提高厨师技术水平;
13、负责每月的工作计划,材料领用以及月总结工作;
14、严格执行消防操作规程,预防发生事故。

审批权限:
1、可审批员工的年假、病假、事假(三天以内);
2、做好每天的下货计划单,每天验收货源后,签名确认收货单;
3、对生产部份设备做好保养、维护,有权下工程维修单;
4、对需要使用的原料,有权下申购单,然后呈餐饮总监批准。

报告程序:西厨厨师长的工作直接向餐饮总监负责。
