Assistant all Chefs, Cooks and Trainees in the kitchen.

DUTIES AND RESPONSIBILITIES:职责和使命

1. The Sous Chef is responsible for the day to day running of the entire kitchen.
副厨师长负责每天厨房日常工作的管理
2. He is to ensure professional operation of all kitchen areas and will ensure that agreed quality, consistency, and hygiene standards are maintained or surpassed at all times.
他需要确保专业态度并在任何时候都保持或超越食品的质量,卫生和其他的标准
3. He will be both profit and cost conscious and will be responsible in the daily requisitioning of all food goods.
他必须负责每天所有食物申领的成本控制
4. Complete detailed checks of the entire Food and Beverage operation during all service periods taking necessary actions to correct any deviation from quality standards.
严格地控制和管理整个食物生产流程
5. Assist in the preparation and control of daily requisition
协助准备并控制每日的食品申请工作
6. Adhere to any reasonable request or change to working time or area, within the parameters set out by company standards.

7. Comply with company grooming standards unless the Executive Chef gives specific exceptions.
除非是行政总厨的允许,否则应该按照公司的规定穿带整洁
8. Assist in costing of all menu items.
协助所有菜单里项目的成本预算
9. Assist in the translation and distribution of recipes.协助配方的翻译和分类

10. Assist in communication and translation between executive chef and Chef de Cuisine and regular staff from both front and back of house.
协助行政总厨/行政副总厨与下级员工做翻译,使他们有更好的沟通
11. Ensure all kitchen equipment is in working order and is utilized by all staff in the proper manor.
确保所有的厨房设备运作正常,合理作用
12. Monitor all waste and spoilage throughout entire kitchen and report any abnormalities to the executive chef/ chef de cuisine
监管厨房所有的废弃物及损耗情况,如发现反常现象,立即向总厨/副总厨报告
13. Undertake and organize repairs and routine maintenance of all kitchen equipment.
做好厨房设备的日常维护与保养
PLANNING AND ORGANIZATION计划与组织

He provides leadership, training and supervision on all production in the kitchen and will oversee the quality and proper utilization of all food items throughout the restaurant.

The Sous Chef influences the skills, knowledge, attitude, communication and team spirit of the kitchen. And must maintain a professional attitude at all times.

? Technical knowledge and job skills training related to all food items and the effective use of provided materials.

? Insure trainees are given the appropriate time and training as laid out by the GM and HR.

? Communication of food trends and market availability.

? Communication of local requirements, food sanitation laws, safety regulations and other to all staff.

? Plan in conjunction with the Executive Chef and Chef de Cuisine activities, promotions, and menu implementations according to the annual marketing plans.
根据每年的市场调查参与协助行政总厨/副行政总厨,促销和菜单调整工作
? Ensure disciplinary and grievance procedures are properly adhered to and followed.

? Assist in the communication and translation between stewarding and chefs.
协助厨师与管事员工的翻译沟通工作
? Assist in the communication and translation between general staff and chefs.

COMMUNICATION沟通

? Conduct twice daily kitchen communication meetings.执行一天两次的厨房会议
? Ensure that all designated action points from daily briefings or operational meetings are being followed by the individuals concerned
确保早会所布置的任务,保质完成
? Complete staff appraisals in a timely manner.及时地完成员工的评估工作
? Attend key briefings and training sessions. 参加所有重要的会议和培训
