? 负责每日厨房营运并管理所有食物准备工作
? 确保能正确引导员工并独立出色地完成工作
? 联系供应商,确保收到的货物符合标准并质量达标
? 及时提交报告(库存/差异表及月报表)
? 监督所有员工事宜,包括员工工作积极性及纪律事宜
? 了解所有员工的工作职责与责任,确保有效地执行
? 转变人员规划和确保最佳生产力
? 监督并执行厨房与洗碗间的指导方针和程序
? 征求客人的反馈中需要改进的地方,并整合有用的建议加强厨房营运
? 监控和改善营运计划和确保食品质量结果
培训和发展
? 识别厨房员工的培训需求
食品卫生和安全标准
? 确保厨房卫生与安全标准的维持
? 主动持久地根据公司标准做清洁与维护工作
? 准备,检查并品尝所有批次的食物,确保食物的口味,重量,颜色,温度及摆盆的一致性
研究与开发
提供思路,提高客人的食物体验改进经验
协助总厨在菜单上的规划和监控食品趋向,并在菜单规划上采用新风格与新想法。寻求员工对客户的意见反馈
成本控制

Position Description:
Main responsibility for Kitchen Operations and Assistance to the Director of Operations to manage the daily operations of the company. Oversees market opportunities, monitors competitive activities and identifies guest needs. Executesmanagement decisions, agreed strategies and tactics which meets Vision and Mission of the company. Specific responsibilities includes:
? Helps to build reputation by providing food in best quality and creative presentation in order to build / maintain relationship to potential guests by knowing and meeting their expectations. Represents the venue and acts as interface to all food supplier. Is present during days and hours of regular operations and on all events (this in alignment with the Director of Operations).
? Manages the Kitchen, ensuresfood quality and receives direct reports from the related staff. Responsible for food menu and dishes offered, their suitable pricing and presentation, as well as for the documentation of all recipes on dishes offered.
? Manages the daily kitchenoperations in alignment with the Director of Operationsrelated to kitchenstaff referring to appearance, service quality, product quality and attention to guests (friendly, fast, efficient and courteous).
? Takes full responsibility in managing the Kitchen according to agreed standards, working procedures and plans. Respects all hyginec standards and assures the appropriate cleanliness at work.
? Actively supports building up a team structure. Participates on daily staff routine meetings and weekly staff meetings. Involves in HR Management including hire and lay off procedures related to kitchen staff.
? Ensures the necessary and mandatory supervision and support on daily work. Solves any difficulties in arranging work, miscommunication and staff ignorance immediately.
? Ensures that
o All Staff will be courteous, efficient and attentive
o Qualitiy standards in service and product offering
o Positive Word-of-Mouth recommendations
? Supports in building a customer database with as much detailed information about our guests, such as birthday, profession, hobbies etc.
? Responsible for daily, weekly and monthly kitchen inventory work.
? Supports the Director of Operationsby deliveringappropriate data for weekly reports covering revenue, costs, unpredicted costs occurred and unusual incidents.
? Further cooperates with the Director of Operations for monthly and yearly reports and on as-is comparison to budgets.

? Excellent oral and written communication skills in Chinese and English
? Customer Care and Relationship Management as well as capability to deal with guest complaints and suggestions
? Role Model for all staff and gives the necessary supervision and support to all employee’s
? Leadership in dealing with difficult situations (guests, employee’s, others)
? Drives the decision making process
? Reports difficulties and problems when necessary by providing the appropriate solution
Qualification Requirements:
? F&B Background
? Minimum of 5 years experience
? Internationality – working experience in International Hotels / Bars and Clubs or Restaurants
? Willingness to work overtime
