A Chief Steward is
one who works closely with all service and culinary team leaders of all F&B
outlets, banqueting and special events (resort wide including park and 2
hotels), is familiar with the usage, handling and storage of all detergent and
chemicals for cleaning, ensures that all operating equipment are in good working
condition, properly stored and keep good control of par stock.

He / she is
responsible for controlling and arranging delivery, setup and clearing of
chafing dishes, operating equipment, warming cabinets, carving board for
Banquet as specified on event order.

He / she needs to ensure
the operating equipment to be delivered to design Banquet areas for setup and
operations as indicated on event order; keeps record and monitors the shipment
of all operating equipment and prepares for capital expenditures / purchase
requisition and purchase order for replacements and new items in accordance
with the budget approved; keeps all back of house clean and dry whilst in the operation,
helps in cleaning of walk-ins and fridges, freezers, coordinates with
engineering for disconnecting and reconnecting of cooking equipment for wall
cleaning.

The Chief Steward
reports to the Executive Chef, is responsible for Kitchen Assistants &
Kitchen Assistant Leads, Pot and Dish washers.

He
/ she should be able to work in a fast paced and ever-changing environment.

KEY ACCOUNTIBILITIES

• Coordinates with overnight cleaner and contract cleaners, ensures that all job specifications are properly carried out in accordance with the contract.
• Has a sound knowledge of food and beverage service / culinary techniques, sequence and procedures.
• Ensures the operating equipment (table top- small wares) / machinery / kitchen equipment are cleaned and handled in a proper way in order to prolong its use.
• Ensures all F&B outlets are well equipment (sufficient / not overstocked), and all equipment are handled properly in the daily operation.
• Responsible for keeping all operating equipment clean and in good working condition.
• Participate in inventory taking as required.
• Ensures all F&B outlets are properly manned whilst in operations.

QUALIFICATION
AND REQUIREMENTS

• College degree required.
• Fluent English and Mandarin.
• 5-8 years’ practical experience in similar nature of job responsibilities with deluxe hotel / restaurant / banqueting.
• Should know and follow the basis hygiene & sanitations, industrial safety regulations.
• Has a clear understanding of the usage and storage of all detergent / chemicals as the regulations stated within.
• Familiar with the cleaning procedures for all table top - small wares including silver, flat, hollow, glass.
• Familiar with the operating procedures of all equipment and machinery within BOH area.
