职位描述

Scope and general purpose of job

To develop a thorough working knowledge of the bar operation. To undertake those tasks requested of you by the management team to the best of your ability.

Responsible to General Manager, Assistant Manager, Group Beverage Manager

General description of duties


? To be punctual for work and aware of your working roster.
? To notify the senior management of any roster requests prior to the rosters issue.
? To attend all training sessions and work reviews as directed by the bar management and to attain a level of working competence compatible with the jobs needs.
? To work to the very best of your ability.
? To work as a team for the promotion and efficient running of the bar.
? To maintain the highest levels of personal hygiene whilst at work and always arrive ready for work in a suitable and presentable condition and to wear the uniform requested of you at all times whilst working.
? To respect company property and take all possible and appropriate actions to avoid damage or breakage to property.
? To observe all company policies and procedures as outlined in your staff handbook.
? You be given a performance review after 3 months of your employment and only then will the decision be made to continue with your employment
? You will be required to attend a 6 month performance review every 6 months.
? Ensure that company confidentiality is kept at all times.

? Bar Manager Duties;

To ensure all bar supervisors, bartenders and bar backs are fully trained for their relevant positions.

To ensure that no bar backs are serving drinks unless they have been asked to by the management.

To ensure that jiggers are being used when a bottle does not have a pour spout on it.

To read the daily bar book and communicate with the other senior bar staff on a daily basis.

To respond to daily emails and tasks that have been set from you from senior management.

To ensure that all the costing of products is current and that they are marked up to the agreed price point.

To participate in the weekly stock take and ensure that it is completed in a timely manner.

To co-ordinate and implement a training program after identifying the need of employees, conduct training sessions for all staff members and evaluate their performance.

To check the completed pour testing on a daily basis and discuss and findings with the bar supervisor.

To ensure all bar admin. Is kept up to date and in a neat and orderly fashion.

To ensure that weekly ABV readings are being taken and tracked and any irregular findings are past on the the Group Beverage Manager.

To track any suspicious activity and report findings to the General Manager and Group Beverage Manager.

To ensure all wastage / breakages are recorded by the bar team via the correct procedure and follow up any Irregular findings.

To build up good guest relations with regulars and new visitors to the bar whilst promoting the venue and the company.

To ensure that all bar staff are correctly attired and groomed to the company standard.

To be fully aware of any items that are out of stock and follow up..

To update any wine vintage changes.

To print the current menu.

To programme the current menu in the POS.

To ensure that all par stock levels are adhered to.

To check the weekly glassware inventory and order if the par levels requires you to do so.

To practice economy and to minimize any incorrect usage of any resources with particular attention given to achieving beverage costs and variable expenses.

To ensure that all order received are checked and immediately put in the store room.

To ensure all cleaning schedules are maintained and the cleanliness of your bar is kept to the highest possible standards.

To ensure that your bar is set up prior to service.

To monitor main bar storeroom and cold room are kept in a neat and orderly fashion.

To ensure that all of the weekly cleaning is completed and you have checked that the work is to the company standard

To ensure that all opening and closing duties are completed and filed away at the end of the shift.

To ensure that the bar is set up prior to service and all the preparation has been completed and checked.

To oversee stock rotation in cold room and main bar storeroom ensuring that all fruit and juice are kept in the correct way.

To ensure that ashtrays are constantly being emptied.

Advise assistant general manager and general manager of any repairs or improvements needed at the premises.

To be aware of whereabouts of all bar operational equipment.

To monitor the correct billing and accounting of all transactions.

To monitor consistency in recipes and presentation of cocktails.

To ensure that drinks are being served out of the service bar and delivered in a timely manner.

To make sure all guest complaints are reported to the management.

To know all the closing and lockdown procedures for the company.

To report any maintenance faults via the correct procedure.

To create a good working atmosphere and build a team in order to increase morale and efficiency.

To attend weekly management meeting and ensure points relating to bar department are followed up.

To attend PR and marketing meetings and come up with monthly promotions and execute them in timely manner.


Any other reasonable duties required by the management.
