主要职责:

1、负责处理厨房所有的流程运作及行政事务；执行并积极配合上级下达的各项工作任务和工作指示，做好部门员工的管理，负责厨房的考勤工作。

2、遵照食品卫生法的有关规定，加强食品的保鲜和卫生工作，监督检查搞好厨房的环境卫生，员工的个人卫生，确保所有食品符合健康要求。

3、负责领导厨房各个岗位作业，指导厨房各班做好餐前、餐中、餐后的准备工作，确保菜品及时供应。

4、控制厨房部们的预算，拟订菜品的成本、费用和利润计划，及时和行政副厨进行沟通；落实货源的验收和储存，并对其作业管理流程作密切监控。

5、监督厨房用料情况，合理使用原材料，减少浪费和损耗，准确掌握原料的库存量，协助公司做好每月的盘点工作，做好厨房成本控制。

6、负责餐厅厨师队伍培训规划和指导，严把技术、质量关，保证菜品质量，随时解决各种疑难技术问题。

任职资格：

1、中专以上学历，5年以上西餐工作经验。

2、3年以上餐饮管理或酒店厨房工作经验。

3、具有强烈的责任心，勇于开拓和创新，作风干练。

4、拥有较高的西餐烹饪技术，了解和熟悉食品材料的产地、规格、质量、进价。

5、对成本控制管理、厨房食品库存管理，厨房的设备知识拥有一定的基础。
