Responsibilities
Provide a solid understanding and thorough education in food service theories.
Ensure proper food handling occurs.
Promote proper grooming, and strictly adhering to the Les Roches Jin Jiang grooming standards.
Assist other departments in the supervision of exams.
Supervise the breakfast period, assigning students for breakfast preparation and service.
Must ensure that guest greeting procedures are followed through in order to provide a good first impression to the customer and making sure that they feel immediately welcomed.
To keep track of opened and assigned tables and ensure that a systematic process in managing the amount of guest's waiting and seating is followed.
To ensure the food and beverage order is taken correctly in a timely manner.
Ensuring students are able to perform suggestive selling in order to enhance guest satisfaction and overall experience.
To follow through the food and beverage order by inputting to the Micros system.
Ensure an overall smooth and efficient operation of the back of the house.
Keep all back-of-the-house students on their toes and occupied at all times.
Liaise with the chef if there are any changes to the menu, if so it must be communicated.
Liaise with the kitchen for fast and efficient food service/especially.
Make sure that all food items are carried out in the correct way of service.
This incorporates correct tray positioning, controlling all sequential steps of service, posture, etc.
Must ensure a continuous supply for service of water and bread, excess Mis-en-Place must be cleared throughout the service
Constantly emphasize the importance of the back-of-the-house staff plays in a hotel operation.
With the executive steward check that all items cleaned in the stewarding department are polished correctly and returned to their proper storage space throughout the service.
To make sure the guest gets the correct bill.
To give correct change.
To balance the cash by the end of the day.
Make sure all dirty linen have been sent to the laundry.
Perform random checks of items placed in the dirty laundry container, Give the students cost examples and emphasize the enormous costs accumulated by laundry in hotel operations.
Supervise the first sitting , Check that the right sufficient Mise-en-place is prepared and ready for service by 10:50.
Supervise the adequate preparation of all service related mis-en-place.
Make students be aware of the importance of a complete mis-en-place; encourage them to double-check all station and table set-up in order to complete in any missing items.
Ensure an adequate preparation of compliments i.e. salt & pepper flowers etc.
The front and the back of the house must be under control during set-up (before) service (during) and the reset (after).
Mustbe cleaned/sanitized and prepared for the next operation.
The entire restaurant is clean, all equipment is stored away correctly, all machinery is clean and turned off and that all cellar cabinets are tidy.
Prepare the breakfast duty roster.
Prepare any paper work necessary for the operation.
Complete the weekly requisition form for all Food and Beverage items needed from the following week.
Supervise the Menu Briefing and allocate duties, responsibilities and daily work order for students.
Ensure that all students on duty both kitchen and service are performing in accordance to Les Roches disciplinary standards
Assist the Chef with the delivery of the daily menu (quantity and quality).
Apply the HACCP standards procedures. Respond to any reasonable request by management regarding F&B operations.

Essential Skills
Education Level: Relevant Bachelor degree (minimum).
Work Experience: Prior work experience in a similar position.
Computer skills in Microsoft Office and Database software.
Languages: English Fluent.

Personal Skills
Well groomed and with an understanding for hotel dress standards.
Exceptional attention to details. Proactive approach to work.
A positive attitude and the ability to plan and adapt to change.
Professionalism with a hospitality spirit.
