Essential Duties and Responsibilities –
？Analyze F&B reports.
？Calculate F&B costs.
？Compare invoices, requisitions, sales& prepare reports showing cost vs sales.
？Conduct checks.
？Spot checks on purchasing, receiving, storing, issuing functions and bar inventories.
？Conduct monthly food& butcher tests to determine yields.
？Work with the executive chef to prepare standard recipe cost detail.
？Pre-cost all restaurants and banquet menus of all purchases and prepared items, Develop information to pre-cost all food items purchased.
？Compare menus vs food cost vs sales price.
？Control portion and minimizes- wastages and pilferages.
？Conduct market survey.
？Check quality of goods received.
？Security in storage of goods.
？Process invoices.
？Check invoices against goods ordered and received.
？Check unit costs.
？Calculate potential food & beverage costs.
？Prepare recipe costs with Executive chef.
？Produce monthly F&B costs by outlet.
？Supervise inventories.
？Check stores requisitions and receipts against stock records.
？Maintain par stock level and reviews regularly.
？Conduct monthly stock checks of F&B, stationery & general stores.
？Compiles reports.
？Investigate and report any irregularities or excessive costs.
？Prepare Monthly F&B Cost Control reports and analyze variances.
？Make recommendations on cost reductions.
？Highlight slow-moving stock items.
？Conduct purchase price comparisons.
？Conduct periodical purchase price comparisons of food & beverage items as well as operating supplies with other hotels.
？Supervise receiving.
？Ensure daily receiving records as prepared.
？Goods and services received are in line with quantities, qualities and prices ordered and agreed.
？Periodically review and confirm the procedures fro receiving merchandise.
？Perform other duties as designated.
？Profitability and popularity analyses of menus and beverage lists.
？Comparative food & beverage sales and costs summary among other hotels.
？Comply with internal control standard and controller’s checklist.
？Ensure all internal control measures are strictly adheres to at all times.
？Conduct random observation of banquet.
？Observe the operation of cash bars function.
？To complete other assignments within deadline as dispatched by Director of Finance & Business Support

REQUIRED QUALIFICATIONS
Required Skills
？Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company
？Proficient in the use of Microsoft Office
？Problem solving, reasoning, motivating, organizational and training abilities.
？Able to read and write English
Qualifications
？Bachelor’s degree or Diploma in Accounting, Finance or related field.
Experience
？3 years in hotel purchasing or auditing experience or an equivalent combination of education and work-related experience.
