职责:
1. Test Bakery Management - workload, team, facility, cost control, hygiene
2. Bread Innovation – genuine NPD breads, breads of the world, factory process review, participate investment justifications
3. Factory Support - Appraisal of bread quality across all lines of bread manufacture. on a regular basis, report and implement. Aim to for consistency of best in class breads.
4. Customer Support – on and off site support for presentations. Tailored Master Classes.
5. Cost control & Costings – right first time costings and implementation of recipes onto trial sheets. Apply process and Business knowledge to ensure well thought out development. Reduction in non-profitable bench and factory work.
6. Product Feasibility – provide support / study on new concepts prior to costing and presentation. Build efficient, margin satisfying development portfolio.
7. Supply Base –have a strong relationship with our key suppliers of ingredients and equipment in order to obtain the best results for bread quality and NPD.
8. Audit recipes and Specifications. Ensure all recipes are compliant with factory specification.
9. Communication - ability to communicate confidently and clearly at all levels – on all aspects of bread and process.
要求:
Dual language preferred.
Knowledge of flour selection, ingredient functionality, fermentation systems and controls, machine and product interface.
Flavours and food combinations would assist in Innovation phases.
Technical food safety basic understanding.
Hygiene standards - basic.
Health and safety basic understanding.
