JOB SUMMARY:

To maintain, service, rebuild, troubleshoot, repair and operate all cooking related equipment and refrigeration as it pertains to the continuous smooth operation of Universal Beijing Resort. Including, but not limited to industrial kitchen and bakery equipment, propane and natural gas, and electrical equipment. Perform preventative maintenance and rehab all kitchen equipment back to manufacturer’s specifications. Supports management in directing and coordinating activities of department and employees by performing the following duties:

· Plans and delegates work tasks. Delegates work assignments among qualified crewmembers. Communicates performance expectations in an effort to ensure proper completion of tasks. Communicates and coordinates with other departments or crafts as needed. Communicates resource needs and work plans to Supervision. Provides two-way communications between work team, supervisor, and other management and HR personnel.

· Actively reinforces company safety guidelines and programs; reports non-compliance. Monitors employee’s productivity, work habits. Leads work startup and stoppage, schedules breaks. Monitors care, condition, use and storage of tools, equipment and other UBR property. Maintains material inventories. Monitors compliance with wardrobe/grooming standards, driving policy, radio usage, and other UBR policies.

· Ensures proper completion of documentation including providing feedback for recognition and performance improvement. Captures written behaviors using the Lead Observation Report to support managerial and supervisory documentation.

· Maintains and shares job knowledge, assists in training developing new and current employees.

· Diagnose and repair industrial kitchen and bakery equipment including, but not limited to mixers, direct steam kettles, proofers, sheeters, dough rounders and rack ovens. Diagnose and repair Commercial gas and electric kitchen equipment including, but not limited to, fryers, steamers and ovens such as pressure cookers, steam kettles, tilt skillets, commercial dish machines, combi-ovens, microwaves, stoves and conveyor type ovens and broilers and commercial espresso machines.

· Diagnose and repair refrigeration equipment including, but not limited to coolers, freezers, ice machines, glycol systems, ice cream machines, and keg coolers.

· Preventative maintenance and rehab of all kitchen equipment to required manufacturers specifications

· Understand and actively participate in Environmental, Health & Safety responsibilities by following established UBR policy, procedures, training and team member involvement activities.

· Perform other duties as assigned.
