西餐厅行政主厨岗位职责：

Major Responsibility主要工作职责
？ Prepare the breakfast and breakfast food.
准备酒店早餐及早餐备料。
？ Prepare and cook the midnight food; ensure the food safety.
餐厅零点菜肴的材料准备、制作和烹饪，保证食品卫生安全。
？ Ensure the quality and quantity of the food purchased; ensure the food standards for freshness, appearance and consistency.
对到货食品材料的验货及核对，确保食品的质量和安全。
？ Plan, develop and update menus and recipes according to the season and the customer’s needs.
按照市场情况、时令季节和客人需求定期推出新的菜式和品种。
？ Manage the kitchen’s daily sanitation and cleanliness.
负责厨房日常卫生工作管理。
？ Be accountable for closely monitoring overall food and beverage budget regarding food cost.
控制相关成本。
？ Manage the staff meal cooking.
员工餐的烹制管理。
？ Provide staff training on menus and recipes.
对员工进行菜式知识培训。
？ In compliance with the Ascott Group's Environmental Health and Safety (EHS) guidelines and policies, pay attention to energy conservation and the safe operation in daily work.
遵守集团的环境健康安全方针政策，日常工作中注意节能和安全操作。
？ Ensuring all service guarantees and commitments are met.
完成领导交办的其他工作。

Requirements 资质要求
？ Minimum three years of food and beverage managerial experience in food cost, raw material, kitchen equipment and quality control;
至少有三年以上餐饮业厨房管理经验，对食材成本、原物料、厨房设备、品管控制有相当的管理经验；
？ Good understanding of different kitchen procedures and food safety regulations;
熟悉厨房各区块流程和作业要求，了解餐饮管理相关规定；
？ Good at eastern and western cooking;
擅长中、西式烹饪料理；
？ Good understanding of food safety regulations;
了解食品卫生法；
？ Good organization, management and communication ability;
有较强的组织和管理能力，良好的沟通协调能力；
？ Responsible, hard working, positive;
有责任心，能吃苦耐劳、工作主动性强；
？ Good team spirit.
