COOPERATION WITH LEADERSHIP
-follow up the requests from group Executive sous chef
-check all outlets kitchen documentation if always updated and tidy
-response all outelts cleaning procedure to reach the FDA standards
MENU REALIZATION
After the menu creation from the chef de cuisine of a standard/special/promotion menu he should lead the process till the application in all outlets:
-check the food costing with purchasing dept.
-report all the information regarding the menus to the leadership for the approval
-after approval let the designer dept. to provide a drawing to be approve from the leadership and printing out.
-after the final approval help the chef de cuisine to apply the new menu to the outlet with the training of kitchen and service staff.
HR SIDE
-help the chef de cuisine on training the new kitchen staff
-report to HR manager the training situation and results
ADMINISTRATION SIDE
-keep the recipe book and the costing for history records of all outlets
-create all dishes working instruction useful for the training of new staff
PURCHASING SIDE
-keep record all outlets incoming material non conformity (to realize the supplier reliability)
-follow up the quanlity of incoming material
-follow up the quanlity of incoming material of new suppliers
