Job Title: Pastry Chef

下属人员: 所有的生产和服务人员

Duties & Responsibilities


1. Ensures that all food is prepared and served according to the standard set by Company rules and Standards and Food Safety Standard Laws. In charge of the quality, consistency and hygiene in the Production Department.

确保所有食品按照公司条例标准和食品卫生安全标准进行准备和生产。

2. Does and checks all Employees, also preparing, baking and presentation of all pastry and bakery items in the whole Production Area. This includes the whole Supervision of the Bakery and Pastry Area, Proofing Rooms, Ovens, All Freezers and Packaging Area, Store facilities including all Employees there.

负责监督检查全体生产部员工的日常工作,以及生产区域内所有面包和蛋糕的制作和展示。包括对面包和蛋糕生产区域、醒发间、烤炉、冷库、包装间以及以上区域内员工的监督。

3. Coordinates with PM to ensure delivery of all pastry and bakery items in Time in High Quality and follow given Standards exactly, make daily Work plan and schedule.

协助生产经理确保所有产品即时发货,并保证产品的高质量。同时协助生产经理制定每日工作计划和时间表。

4. Make sure Company recipes are used correctly and pastry and bakery items are presented according to company standards.

确保面包和蛋糕的生产符合公司配方,并且符合公司标准和食品卫生安全标准。

5. Check and ensure weight control, sizes control, appearance control in all Production Areas and on all Production Lines. Makes sure Recipes accuracy and machine settings in the production Department and Record this on Daily Bases in given Documents to the Department Head. Assured Quality Standards (given by Company Standard, QC and/or PM) and Avoid Wastage and handout the requested Documents daily to the Department Head.

监督检查并确保生产区域内及全部生产线上的产品外观、重量、大小尺寸的控制掌握。确保配方使用和生产部门内机器设备设定准备的准确性,并每日记录,对部门经理进行日报。确保到达质量标准(公司、质量控制部和/或生产经理下达的标准)同时避免浪费,并每日记录并向部门经理进行日报。

6. Make sure that all machines, equipments and tools, and utensils (fridges, benches, etc.), are clean and in good working condition at all times. Checks all areas and Employees assigned to him in regards to sanitation and hygiene to avoid contamination of any kind.

检查并确保所有机器、器材、(冰箱、货架等)、工具清洁卫生并保持工作状态。监督检查其下属员工和管理区域的符合消毒卫生要求。

7. Follows and enforce Hygiene standards as HACCP, ISO and others.

遵守并执行HACC, ISO的卫生标准。

8. Make sure the whole Production Area assigned to him is always in a safe condition, in order to prevent accidents and provide at all Time Highest Hygiene Standards set by Company Standards/Rules and Chinese Food Law

检查并确保其所属管理区域内的生产安全,预防生产事故的发生,保证贯彻执行公司制度标准,中国食品安全法,HACCP,ISO,BRC和ISA标准。

9. is responsible to ensure the flow of information work from him all the way to the Management level. This includes collecting and providing all controlling Papers, Sheets and/or Documents he has to provide (including down to/from supervisors’ Level) to the Department Head on Daily Bases.

保证至主管级别的信息流通,包括收集和提供所有的文件,表格、报告和记录(包括将文件传达给主管级员工并回收),每日汇报给部门经理。

Control and enforce daily updates of Calcmenu and F&B Control

10. Maintains good relationship with all Sections in Production department to avoid friction of any kind.

保证生产部中所有小部门之间良好的工作关系,避免任何形式的摩擦。

11. Oversees and leading Stewarding in Production.

监督检查清洗间的工作符合标准。

12. Is all Time Responsible for the Workflow, Productivity, Quality of all Bakery Goods (products) of all of from him Supervised Persons on to him Assigned Production Lines and Areas. He is responsible for Training to the Him assigned and supervised Employees. He has to Document this.

对其所属管辖生产线的员工的工作流程、生产工作量、产品质量负责。对其下属员工进行培训和监督并进行记录。

13. If Problems of any Kind occur he has immediately to inform his Department Head.

发生任何问题必须及时通知部门经理。

14. Check and ensure weight control, Recipes accuracy and machine setting in the production area.

检查并确保重量和菜谱的正确以及机器的正确设置。

1. Plans and implements effective skills and communication training programs, in conjunction with the Production Manager, QM Manager, Training Manager, Sales Manager and Logistic team.

同生产经理、质量管理经理、培训经理和物流人员计划并实施有效的技巧和沟通的培训项目。

2. Maximizes employee productivity and morale, whilst consistently maintaining discipline, following Company guidelines and local legislation.

3. Motivates all staff through professionalism, organizational skills and team spirit to perform their duties.

从专业化、组织技能和团队精神方面鼓励员工使其各尽其职。

4. Ensures all production staffs are in proper uniform, well groomed and properly disciplined.

确保所有的生产员工着装一致、守纪律,相互帮助。

5. Reports all accidents, health and safety hazards to the Production Manager.

对工作中的事故和健康或安全隐患及时向生产部经理汇报。

6. Enforces personal hygiene standards as per Company rules.

按照公司规定执行个人卫生标准。

1. Helps to directs, controls and coordinates the activities of all Bakers and Cleaners, engaged in preparing and our products as per instruction, to ensure an efficient, profitable and smooth work flow at all times.

2. Inspects storerooms, refrigerators and freezers daily to ensure no wastage.

3. Controls costs by minimizing spoilage, utilizing food surplus and portion controls.

4. Check the quality and quantity of raw material received form the suppliers, markets and stores.

5. Is always looking for cost saving and environmental ideas.

为节省成本和环境改善出谋划策。

6. Maximizes employee productivity, in order to minimize payroll costs.

最大限度的提高员工的生产力,减少工资成本。

7. Monitors all production operating costs and take corrective action, when necessary, to reduce expenses.

对整个生产环节的成本控制进行监控,发现问题及时纠正,减少必要的开支。

8. Make monthly visits to markets, for product and price research.

每月定期到市场上进行产品和价格调查。
