Responsibilities
? Oversee all kitchen operations of the restaurant in Shanghai
? Manage and supervise all kitchen staff to ensure smooth operation in all areas
? Execute and follow through all set standards in kitchen including but not limited to cost control, food acquisition, inventory management, food portion and presentation, safety and hygiene
? Organize kitchen staff schedules, regular duties and training plans such as cleaning, designs menus and makes sure cooking activities are coordinated between cooking staff when preparing meals
? Identify the problems encountered in operations, analyze the problems and provide advice and recommendation to top management to enhance the overall efficiency and effectiveness of the operations.
? Analyze the performance of menu items with necessary improvement of new dishes from time to time
? Set deliverables on short-term and long-term needs of the operations
Requirements
? F.5 / Diploma holder in Hotel / Catering Management or related disciplines
? A minimum of 10 years’ working experience in International F&B management preferably in French cuisine
? Excellent leadership, strong manpower planning, training and development skills
? Service-oriented and good interpersonal skills
? Good command of spoken and written Cantonese, knowledge in Putonghua and English would be an advantage
? Station in Shanghai (better workin shanghai now)
