2、检查好餐厅餐具是否卫干净卫生，桌椅是否整齐，自助餐台上的出品是否合格，音响电视是否开启，照明灯是否有损坏，保证开市后的正常运转。

3、收银、楼面的员工是否各自到自己的工作岗位上准备就绪。

4、注意餐厅就餐客人动态，加强与客人的沟通，了解客人对饭菜的意见，建立客人档案信息，妥善处理客人投诉，并及时向餐厅经理反应处理问题情况。

5、遇有重要客人或重要宴会，要认真检查餐前准备工作，在现场指挥，提高服务无效率和质量。

6、走动式管理，多巡台。查看每一片餐域的销售、服务、卫生是否达到相关标准，多注意主管、服务员的表现，随时纠正他们在服务中的失误、偏差，给予相应的指导，做好工作成绩记录，并想出准备改善的方法和步骤。
