职位描述
工作责任 Job Responsibility
1. 负责餐厅的食物出品和厨房操作和管理, 菜单的制定, 定期推出新菜 Responsible for the food production and kitchen operation and management, menu planning, create new dishes regularly.
2. 制定每款菜式的菜谱, 与会计共同计算每亇菜的成本; 有记录 Set up recipe for each dish, to calculate the food cost with the accountant. Keep record.
3. 推出有创意的菜式以认合顧客需求 Be creative to design new dishes to satisfied the customer need.
4. 控制食物成本, 食品浪费, 要从供货商争取最合理价格, 保持最优质的食品质量 Control the food cost and food wastage, to bargain the best price from suppliers, maintain high standard of food quality.
5. 负责食品安全和卫生标准, 按拟定的卫生标准严谨执行Responsible for the food safety and maintain the high level of hygiene standard for the kitchen operation; responsible for any food safety issue.
6. 关注餐厅每月的营业动向以便提高收入并改善不足之处 Review the monthly revenue reports; to know how to increase the profit margin and to improve the weakness area
7. 培训厨师新菜谱, 烹调技巧, 份量控制, 菜式卖相, 严格规定按标准菜谱制作, , 试菜并沟通; 和推出有创意和好味道的菜式 Provide training to the cook on new recipe, cooking techniques, portion control, food presentation, strictly follow the standard recipe, taste panel together, be creative to design new dishes with good taste.
8. 对合作伙伴如大众点评, 锦食送, 美食到家的食物和服务要负责任, 确保出品质量, 效率并保持良好合作关系 Responsible for the commitment of food quality and efficiency to maintain the healthy relation with dianping.com, jinxisung and takeaway company.
9. 与餐厅经理紧密合作, 确保提供好的食品与服务质量, 达到最高利润和顧客满意. Work with Restaurant Manager to assure the good quality of food and service, to achieve the higher profit and customer satisfaction.
10. 确保出菜的速度以让餐厅能接第2轮生意的机会. To strengthen the efficency of food serving to allow the turnover of the table
11. 参与每月制定的市场调查时间表并分配高级厨师参与, 以了解批发市场的品种和价格 Participate the monthly market survey, also to schedule senior cook to attend, in order to understand the supply and price from the wholesale market.
12. 严谨控制并执行采购和收货的程序, 与供货商定期沟通, 核对和比较报价单 Seriously control and execute the purchase and receiving procedures, regular communication with suppliers, check and compare the price list regularly.
13. 促进青檸泰国餐厅的品牌在市场上的知名度 Promote the awareness of the brand name of LIME Thai Restaurant
14. 与顧客建立良好的沟通和关系 Build good relation and communication with the customers
15. 参与餐厅的所有操作会议, 员工培训和活动 Participate all the operation meeting, staff training and activities of the restaurant
16. 跟办在会议中的分配的工作, 协调相关员工以达成任务 Follow up all the assignment and tasks of the operation meeting
17. 负责招聘厨房员工, 分配工作和职责, 值班表, 考勤报告, 宿舍分配, 健康证的工作 Responsible for the recruitment of kitchen staff, job assignment, job description, duty roster, attendance record, dormitory assignment, health certificate.
18. 执行餐厅的盘点制度并监管盘点工作并妥善存档 Execute the stock take procedures and properly recorded
19. 跟进定期的油烟管道清洁(至少60天); 和灭虫灭鼠服务(30天); 并妥善存档
20. 依从餐厅的政策与程序并贯彻执行Execute the routine grease pipe cleaning(at least 60 days) and pest control(30 days) with proper record. Follow and execute the policies and procedures
21. 对成本, 开支的控制要有完善制度和方法 To develop system to proper control food cost and expenses.
